Ingredients

115g (4oz) margarine (or 2oz butter and 2oz margarine)
1 cup caster sugar
1 cup raisins
1 cup sultanas
1 tsp bicarbonate of soda
2 eggs
1 tsp mixed spice
1 tsp cinnamon
1 cup cold water
1 cup plain flour
1 cup self-raising flour

Handy Hint

Don't worry about adding the flour while the mix is still hot but let it cool before beating in the eggs.

Method

1. Put water, margarine, sugar, fruits and bicarb. soda into the pan and boil a little.
2. Add the flour and let it cool. Beat in egg and mix well. A little sherry or vanilla extract can be added at this stage if liked.
3. Pour into 2 – 1 lb tins and bake for about an hour, or until a skewer comes out cleanly when the centre of loaf is pierced.
