Ingredients115g (4oz) margarine (or 2oz butter and 2oz margarine)1 cup caster sugar 1 cup raisins 1 cup sultanas 1 tsp bicarbonate of soda 2 eggs 1 tsp mixed spice 1 tsp cinnamon 1 cup cold water 1 cup plain flour 1 cup self-raising flour |
Handy HintDon't worry about adding the flour while the mix is still hot but let it cool before beating in the eggs. |

Method1. Put water, margarine, sugar, fruits and bicarb. soda into the pan and boil a little.2. Add the flour and let it cool. Beat in egg and mix well. A little sherry or vanilla extract can be added at this stage if liked. 3. Pour into 2 – 1 lb tins and bake for about an hour, or until a skewer comes out cleanly when the centre of loaf is pierced. |
