Ingredients900g (2 lbs) potatoes
1 tsp mustard seeds
1 tbsp tomato purée
¼ - ½ tsp garlic paste
¼ tsp chilli powder
1 tsp lemon juice
½ tsp salt |

Can be served hot or cold |
Method1. Peel & cube potatoes and boil till cooked but firm, then drain.
2. Meanwhile, heat 1 dessertspoon oil and when hot put in mustard seeds. Cover & fry till they pop.
3. Add tomato purée, then stir in remaining ingredients & fry gently for a minute or two on medium heat, being careful not to burn.
4. Then add a little water and fry again until nearly dry. Adjust seasoning if necessary.
5. Mix in the drained cooked potatoes until fully coated.
