Ingredients

30-40g porridge oats
1 tsp dried cranberries
1 tbsp mixed nuts/seeds, (I use pumpkin, flax and sunflower seeds)
Apple juice to just cover
2 tbsp plain or vanilla yoghurt
Handful of blueberries of fruit in season

Handy Hint

I buy my pumpkin and sunflower seeds in large packets in the World Food section of the supermarket or at an Asian shop. They are much cheaper than in the 'health food' section

Method

1. Put the oats, cranberries and nuts and seeds in a small deep cereal bowl.
2. Pour over enough apple juice to just cover.
3. Leave to soak overnight in the fridge.
4. Next morning add the yogurt and blueberries or other seasonal fruit.
5. Mix and enjoy.
