Ingredients

3 egg whites
1 tsp vinegar
1 tsp cornflour
100g (4oz) caster sugar
double cream
200g raspberries/strawberries/blueberries depending what you like or a mixture!

Handy Hint

If egg whites are stiff enough you should be able to hold the bowl upside down.

Method

1. Whisk egg whites until stiff, add vinegar, cornflour and half the caster sugar and whisk again, then fold in the remaining sugar.
2. Place in a circle on greaseproof paper on baking tray. Bake in oven at 170°C/gas mark 3 for an hour until firm and crisp.
3. Once cooled whip double cream, spread on top and decorate with fruit.

Emily loves helping me make this, especially when I hold the bowl of egg whites over her head!!! Kids love this as a special treat after dinner.
