Ingredients

6 eggs
3 tbsp vegetable oil
5cm (2 inch) fresh root ginger (chopped finely)
1/2 onion (chopped finely)
2 finger green chillies (chopped finely)
2 fresh tomatoes (skinned and chopped)
Fresh coriander (around a handful)
Salt and Pepper for seasoning

Handy Hint

Cover the top of the frying pan with foil, cooking time is reduced.

Method

1. Fry onion in vegetable oil until golden brown.
2. Add the chopped ginger and chillies and fry until dark brown.
3. Add the tomatoes, stir until oil seperates or the mixture is dark red.
4. Spread the mixture evenly around the frying pan.
5. Crack eggs in to the frying pan.
6. Sprinke the salt and pepper.
7. Sprinkle coriander over the top and cook on a low heat until eggs are cooked
