Ingredients

2 tsp fennel seeds, slightly crushed
2 rashers smoky bacon, cut into strips
125ml of Sicilian red wine (save the rest for drinking with the meal!) or 125mls good fish stock
1 medium onion, finely chopped
2 garlic cloves, finely chopped
1 red chilli, deseeded and finely chopped
olive oil
1 400g tin of chopped tomatoes
50g fine green beans, chopped into 3 cm lengths
1 tbsp harissa paste (or tomato purée if you don’t like it too hot)
1 tsp dried rosemary
300g (11oz) fusili Tricilore pasta
225g (11 oz) raw King Prawns
1 tbsp of grated Parmesan or similar hard cheese, to serve
Salt and freshly ground black pepper (to taste)

Handy Hint

Substitute the harissa with tomato purée if you do or like your food hot and substitute the wine with stock if you would like to keep alcohol free.

Method

1. Put a large sauté pan on a medium heat. Lightly crush the fennel seeds and tip them into the pan. Cook for a minute or two, tossing them from time to time, until they start to release their lovely aroma.
2. Meanwhile,add the bacon, onions, garlic and chilli to the pan with a little drizzle of oil on high for 1 minute, and then sweat it for 5 minutes, on a medium heat, stirring.
3. Next add the tomatoes, wine , harissa paste , chopped green beans and rosemary. Turn up the heat slightly and leave it to bubble away for about 9-10 minutes so the sauce can become nice and thick and full of flavour and the beans to cook. Give it a stir every so often to prevent it sticking.
4. Meanwhile, cook the pasta in a large pan according to instructions.
5. Add the prawns to the sauce for the last 4 minutes of cooking time. Meanwhile, drain the cooked pasta well and return it to the pan.
6. The prawns should now be cooked in the sauce. They should be pink and white on the outside and white inside. Toss pasta in the pan with the prawns, add salt and pepper if needed and serve, with a thin scattering of the cheese and a glass of the rest of the wine.
