Ingredients

-4 tbsp olive oil
-sea salt
-4/5 cloves of garlic (depending on how much you like it!)
-an onion
-3 courgettes
-2 peppers (red, orange or yellow work best)
-2 medium potatoes
-2 parsnips
-can of chopped tomatoes
-can of chickpeas

Method

-preheat oven to 220C/gas mark 7
-dice, then roast all of the vegetables with the garlic, drizzling them with olive oil, sea salt, black pepper and any other flavourings you'd like to use.
-when they're nice and brown, transfer the vegetables from the roasting tin to a deeper dish.
-add the tomatoes and chickpeas and simmer for a further 10/15 minutes (add more seasoning here, to taste)

Just had this for dinner and it was amazing! Simple, cheap ingredients but really tasty and satisfying. I used dried oregano on my roast veg, plus added some aubergine, otherwise followed the recipe exactly n

This was absolutely delicious and so easy to make. I did have to shop specially for peppers and courgettes and feel it would be lacking without them. I added a vegetable stock cube. Even the meat lovers in the family loved it. Making it again tomorrow and I am going to try some vegetable suet chilli and herb dumplings with it. Thank you Granin!
