Ingredients

6 slices of bread (I used brown) cut into cubes
1 leek, thinly sliced
1 average sized tomato, chopped
1 ancient tin of anchovies in olive oil, drained and chopped
200g grated cheese (I used a mild cheddar so you might need less of a strong cheese)
3 large eggs
3/4 of a pint of milk (I used blue top)
chopped fresh parsley (I forgot this)

Method

- Beat the eggs with the milk. You can keep a bit of milk back and add it when you see how much your bread soaks up.
- Put all the other prepared ingredients into a bowl and mix well. Add the egg and milk.
- Pour into a baking dish. Mine measures 24cm in diameter and the mixture was about 5cm deep.
- Bake in a hot oven 200°C / Gas 6 for 30-40 minutes.
- We ate it with sausages and lamb's lettuce.
