Ingredients

10 bacon rashers (diced)
200g sugar (or less)
250ml distilled white vinegar
2 eggs
1 tsp salt
1 tsp prepared mustard
1 dash cayenne pepper
10 large potatoes (boiled)
1 medium onion (sliced; optional)

Handy Hint

Can be served hot or cold. Reduce the amount of sugar and increase the cayenne if you prefer more kick and less sweetness. Ideal for a party.

Method

1. Fry bacon and boil potatoes.
2. In a small bowl, add eggs, salt, mustard, sugar, vinegar and cayenne pepper.
3. Beat well and pour into hot pan with bacon and bacon grease stirring till thickened.
4. Add diced cooked potatoes and sliced onion (or onion powder).
5. Serve hot.

I Iive in Germany and have NEVER had sugar in a potato salad! it sounds nauseating........
