Ingredients

8 ounces pecans

5 3/4 ounces rolled oats*

8 1/4 ounces pitted and halved dates

2 teaspoons cinnamon

1/4 teaspoon salt

8 ounces chopped apples

*For gluten free bars – just add gluten free oats instead.

Handy Hint

Stage 5: Before baking, fold the extra grease paper over the bars and flatten with the spatula on top to prevent sticking.

Method

1. Preheat oven to 350 F

2. Line a baking sheet with a grease proof paper and spread the pecans and oats out on it in a singe flat later. Then bake in the oven for 10-15 mins until toasted and fragrant.

3. Line an 8 inch square pan with more grease proof paper leaving enough on the sides to use as handles for pulling out the bars after they are baked.

4. Place toasted nuts and oats in food processor with the dates, cinnamon and salt, process until all ingredients start to slump together (use spatula to move things around).

5. Transfer the mixture to the prepared pan, using a wide, flat spatula to pat it down into a flat even and compact layer that takes up the entire space.

6. Bake for 20 mins, cool for 10-15 mins and then slice into individual bars. Once cooled, remove and store in an airtight container in the fridge.

This is a gem of a recipe from Bright-Eyed Baker, a really tasty and healthy energy bar, jam packed with nutrients and naturally sweetened, much better for you than most store bought 'snack bars' that usually have way too much sugar.
