Ingredients1 lb cooking apples½ lb chopped dried dates 1 medium onion 2 tablespoons water 2 cloves garlic ½ lb sultanas ½ teaspoon salt 1 inch piece of fresh ginger finely chopped 1 teaspoon ground cinnamon ½ teaspoon cayenne pepper 1/3 pint malt vinegar 1 lb brown sugar |

MethodPeel, core and chop apples. Peel and chop onions. Place in large saucepan with water and simmer for 20 mins. (This prevents the onion going hard when the vinegar is added later.)Add salt, garlic, dates, sultanas, ginger, cinnamon, cayenne and half the vinegar. Continue to simmer gently until quite soft. Add sugar and remaining vinegar and simmer until mixture is quite thick. When ready, there should be no free vinegar in the pan. Bottle the chutney while hot in clean warm jars and screw lids tight. (Do not allow chutney to come into contact metal lids as they will rust because of the vinegar content.) |
