Ingredients

4 beaten eggs
1 chopped onion
1 chopped red pepper
Chopped leftover new potatoes
Chopped cherry tomatoes 6-8
4 tablespoons cold water
Serves 2

Handy Hint

Just check that it is fully cooked. Sometimes the varying amount of potato has an effect on the cooking time. Can be eaten hot or cold.

Method

Switch the oven on at C 180° Gas 4 , F° 350
Grease an 8 inch pyrex dish with butter.
Beat the eggs and water together.
Add seasoning to taste plus herbs if desired.
Add all the other ingredients and place in the pyrex dish
Place in the oven and bake for about 45 mins
