Ingredients2 cooked beetroots (some people use them raw for salad but I prefer them cooked - roasted or boiled)1/2 celeriac (about equal the quantity as the beetroot). Goat's cheese - about 100gr. For the dressing: 1 orange or a couple of clementines 1 tsp Dijon mustard 1 tsp honey 1 tsp salad oil |
Handy HintAlthough the celeriac is raw, I tend to blanch it for a minute or so in boiling water. |

MethodGrate the veg and toss.Make the dressing by squeezing the juice out of the fruit and mixing with the mustard, honey and oil. Pour the dressing over the salad and leave it to marinate for at least 30 mins. Add crumbled or cubed goat's cheese (100gr or to taste, I don't like too much of it). |
