Ingredients

500g chicken breasts
Approx 12 tomatoes
5 shallots
olive oil
mixed dried mushrooms
250g coconut milk
25og vegetable stock
5 kaffir leaves
2 dashes of fish sauce
2 dashes of soya sauce
Coriander (12 stocks)
1 teaspoon cumin seeds
3 chilli's
3 garlic cloves

Method

Fry off your shallots until browned (with olive oil)
pop in your coriander, cumin, chilli and garlic on medium heat for a couple of minutes
dice your chicken and pop in until browned
add coconut milk, stock, kaffir leaves and bring to boil
Pop in all other ingredients and simmer for 2 minutes.
