Ingredients100g white chocolate chipsjuice of 1 lemon 250g plain flour 200g granulated sugar 2 tsp baking powder ¼ tsp bicarbonate of soda ¼ tsp salt 150g butter, cut into small cubes 200g extra thick double cream 1 tsp vanilla essence zest of 2 lemon Lemon glaze: 100g icing sugar juice of 1 lemon |

Method1. Preheat oven to 190°C, gas mark 52. In a large mixing bowl sieve the flour together with the sugar, baking powder, bicarbonate of soda and salt 3. Cut in the butter until a fine, grainy texture forms 4. Stir in the cream, vanilla essence, chocolate chips and lemon zest 5. Using a non-stick baking sheet spoon 1 heaped tablespoon of mixture at a time about 1 inch apart 6. Bake for approximately 17 minutes or until the cookies have started to brown on top. 7. Remove from the oven and transfer the cookies onto a cooling rack and allow to cool completely 8. While the cookies cool, make the glaze. Place the icing sugar and lemon juice in a small bowl and stir together until smooth. 9. Drizzle the glaze over the cookies and allow to set completely before serving |
