IngredientsMushrooms en CrouteA Sarah Brown Recipe. Feeds 8 Heat oven to 400deg F. 200 deg C or gas mark 6 A large pack of frozen puff or flaky pastry. 3 tblspns of sunflower oil. 3 tblspns of Butter 2lbs chopped mushrooms Dark flat mushrooms are best for flavour. 2 cloves of garlic. 2 sticks of celery chopped 1 eating apple chopped 2 tbsp fresh parsley (dried just will not do - buy fresh chop and freeze) 1 tsp chopped dried marjoram 2 tsp Miso paste (fermented soya beans) any whole food shop or a good supermarket. |

MethodMethod1.Heat oil and butter, 2.Gently fry the celery and apple allow to soften, add the chopped mushrooms, fry some more. 3.Put lid on the saucepan and allow the mixture to cook over a low heat for 10- 15mins, until not too much liquid remains, it should be moist but not soggy. 4.Mix in parsley marjoram and breadcrumbs. The mixture should be dry enough to form a loaf shape. 5.Roll out the pastry enough to cover the cake decorate with pastry holly leaves etc. cut diagonal slashes across the top. 6.Brush with egg. 7.Bake for about 25/30 mins on a baking sheet, or 35 to 40 mins in a loaf tin. Judge when the pastry looks a good colour. 8.Serve with the usual xmas veg and a good vegetarian gravy. |
