Ingredients

4oz raisins
8oz chopped dates
6oz sultanas
4oz currants
10oz butter or marg
half pint water
Large tin condensed milk

5oz plain white flour
5oz wholemeal flour
3/4 tsp Bicarb of Soda
pinch salt
generous tablespoon of marmalade

Handy Hint

Line your baking tin (a large one) and cover the cake with a double layer of baking paper also.

Method

Put all the dried fruits, the butter, water and condensed milk into a large saucepan and bring to the boil. Simmer for 3 minutes. Leave to cool for about half an hour.

Stir in the rest of the ingredients.

Bake at 170°C for 2-3 hours.

This is great on its own but we like it best in thick slices well buttered and eaten on top of a mountain. Enjoy.
