Ingredients

Spinach leaves 1 large bag
Feta cheese I block
Pack filo pastry
1 egg and one egg white
Pepper

Handy Hint

Keep filo covered with damp cloth until ready to use

Method

Wilt spinach
Crumble feta and mix with cooled spinach
Add egg, well beaten. And one egg white and black pepper
Butter the filo sheets and put 2-3 in the base of ( I used a buttered lasagne dish)
Add the mixture and top with crumpled sheets of filo
Bake in oven until filo is golden and crispy.
Serve hot or cold!

The original recipe had more eggs in it but as I'm sensitive to egg yolk I reduced it to one egg and added some egg site instead. It worked fine
