Ingredients

2/3Onions (preferably red but not too important)
1 large aubergine
2 courgettes
2/3 red and yellow peppers
Breadcrumbs(home-made or packet
Olive Oil

Handy Hint

Even better the next day!

Method

1) Prepare aubergines and courgettes by cutting and salting them, leaving 20 mins then wiping liquid off.
2) Clean all vegetables and peel onions and cut all up into 1 inch pieces approximately.
3) Prepare to get your hands yucky and pour oil on vegetables turn them over with your hands and mix well until all vegetables seem covered in oil.
4) Do same with breadcrumbs,turn over vegetables with your hands trying to get all the oiled vegetables covered in breadcrumbs.
5) Put on a baking tray or lasagne type dish and roast the vegetables on a medium heat for 45 minutes.
