Ingredients2 x 150g monkfish cut into bite sized pieces
250g couscous (packet spiced)
Bunch parsley (chopped)
1/2 bunch coriander (chopped)
Lemon
2 garlic cloves (chopped)
4 tsp (heaped) Ras el Hanout spice
Olive oil |
Handy Hint
You can either use plain couscous and chop in tomato, red pepper, onion or you can use a ready flavoured couscous.
You can also use other white firm fish as a cheaper option. |
Method1. Mix the Ras El Hanout into 4 tbsp olive oil together with the parsley and garlic in a bowl.
2. Add fish and mix in. Leave in fridge to marinate.
3. Make up couscous with hot water or chicken stock.
4. Put chopped coriander, 2 tbsp olive oil and the rind and juice of a lemon into a small bowl. Add half of this to the couscous.
5. Fry the marinated fish then serve on top of the couscous and pour over the rest of the lemon mix over. Serve
