Salmon fillet recipes please?

We are trying to eat more fish and enjoy salmon steaks/fillets. Anyone have a nice recipe for salmon in a tasty sauce? I find it little dry just grilled or baked.

A bit of heresy here I buy a fresh parsley or watercress sauce from M & S sauce. I like the fish bags from Lakeland or Amazon and cook the fish in a little butter and lemon in the microwave.

I also do a delicious salmon recipe marinated in yogurt, tomato purée garlic etc with a salsa. It is so healthy and easy to prepare. That’s a Good Housekeeping recipe which I can give you if you wish

Grease a piece of foil and put salmon steak on there. Season salmon - I use bouillon powder and herbs. Slice some tomatoes and place on top, then loosely wrap it all in the foil. Put in the oven - I use the remoska - and when you open the parcel the salmon is baked/steamed and succulent - certainly not dry.

I make this one quite often. It is lovely. I have Madhur Jaffrey's Curry Easy book from where this recipe comes.

Salmon in a Bengali Mustard Sauce

3/4 lb skinless salmon fillet
1/4 tsp salt
1/4 tsp ground turmeric
1/4 tsp cayenne pepper
1 Tablespoon ground mustard
1/4-1/2 tsp cayenne pepper
1/4 tsp ground turmeric
1/4 tsp salt
2 Tablespoons mustard oil (or extra virgin olive oil)
1/4 tsp whole brown mustard seeds
1/4 tsp whole cumin seeds
1/4 tsp whole fennel seeds
2 fresh hot green and/or red chilies (bird’s-eye is best), slit slightly

Cut the fish into pieces that are about 2″ x 1″ and rub them evenly with the salt, turmeric, and cayenne. Cover and set aside in the refrigerator for 30 minutes-10 hours.

Put the mustard powder, cayenne, turmeric, and salt in a small bowl. Add 1 tablespoon water and mix thoroughly. Add another 7 tablespoons water and mix. Set aside.

Pour the oil into a medium frying pan and set over medium-high heat. When hot, put in the mustard seeds. As soon as they start to pop, a matter of seconds, add the cumin and fennel seeds. Stir once and quickly pour in the mustard paste. Add the green chilies, stir, and bring to a gentle simmer. Place the fish pieces in the sauce in a single layer. Simmer gently for about 5 minutes, or until the fish is just cooked through, spooning the sauce over the fish all the time.

To do my salmon I have brought some trays from Tesco foil roasting trays. I fill the tray with salmon add the spices slice some tomatoes and after put on slice of lemon. Bake in oven for 10 to 15 minutes usually have with new potatoes and peas.

Couple of spoonsful of chille jam on top of salmon and slice of lemon. Wrap in foil and bake for about 15 - 20 mins. Jam melts and makes a tasty sauce.

We bake it open in the oven with sweet chilli sauce and serve it with stir fry in a bit of soy sauce, and noodles . Delicious and very simple.

Tea Smoked Salmon
Pinch Nutmeg, 25g softened butter, vegetable oil for drizzling
2 Salmon, 2 lapsang souchong tea bags, 4 tbsp boiling water
2 large handsful Kale

1.Beat nutmeg into the butter until well blended, spoon onto a sheet of cling film roll into a sausage shape and secure ends to seal, chill in the fridge for 30 mins or until firm.
2.Preheat oven to 180C, mark 6
3.Line roasting tin with 2 sheets aluminium foil, big enough to fold over and wrap salmon fillets completely. brush foil with oil, then lay salmon in
4.Add tea bags to the foil lined tin next to salmon fillets, then pour over the hot water. Fold over to create a parcel, pinch ends together t seal cook in oven for 15 mins or until cooked.
Heat large frying pan with drizzle of vegetable oil and stir-fry the kale for 3-4 mins, add a splash of water to steam the kale, cooking for another minute until kale is tender.
6. To serve pile kale onto the serving plates and lay salmon on top. Slice the nutmeg butter into rounds and place one round on top of each pile of Kale.

I usually just bake it plain, wrapped in foil. Then serve it with a tasty veg dish such as ratatouille
Otherwise it's nice fried - a tiny amount of oil. Fry skinside first. Sprinkle flesh with soya sauce, lemon juice and a tiny amount of brown sugar. When you fry that side it becomes a crisp caramel topping.

Good Housekeeping.

Salmon Fillets with salsa Fresca
Serves 6 so adjust accordingly
Prep time - 20 mins Plus marinating
Cooking time 10 mins.
236 calls per serving.

1 large clove garlic crushed
Finely grated rind of 1 lemon
1 tbsp lemon juice
1/4 pt natural yogurt
1 tbsp sun dried tomato paste
6 salmon fillets
Lime slices to garnish

Salsa Fresca
1 large gree chilli seeded and finely chopped
6oz cucumber finely diced
Grated rind and juice of 1 lime
2 spring onions
12 oz cherry tomatoes
1 tsp sugar
Small handful of mint

Mix together the garlic, lemon rind, juice, tomato paste and yogurt in a bowl
Thoroughly coat the salmon cover lightly and chill for 3 hrs

Combine all the salsa ingredients except the mint in a bowl and season. Cover and chill for 2 hrs

Grill salmon until flesh flakes easily. (I actually bake in the oven with the marinade.

Chop the mint and stir into salsa

Serve salmon and salsa with lime slices.

You can also serve this at room temperature if you wish.

I do it for 2 but serve the same amount or more salsa.

Salmon is very oily so if you find it dry maybe you're over-cooking it. Takes only a few minutes each side if fried in a splash of olive oil, or baked on a high heat for about 15 minutes.

This was my lunch today: skin side smeared with dijon mustard, then pressed into gram flour mixed with mixed herbs & chilli flakes, then seared on a high heat to develop a crust then a minute or so on the other side.

Served with roasted celeriac which was mixed with a blob of creme fraiche mixed with olive oil and lemon juice.

This is our favourite recipe

Place 2 bay leaves on top of each salmon fillet, wrap each fillet in 3 slices of pancetta, roast for 29 mins

Cook some frozen peas, stir through some lemon juice, black pepper chopped mint leaves and tip into the roasting dish and serve.

New potatoes are good with this!

sticky salmon is a nice, quick, baked salmon with oyster & teriyaki sauce.

pesto salmon by Delia, yummy.

grilled with spiced yoghurt and served with spinach-y rice.

We eat lots of salmon, these are my 3 favourites.

I buy my salmon from the fish counter at Morrison's. It comes in a cook bag and you can have a flavouring added with butter. Pop in the oven for about 20 mins and it's done. Scrummy! Serve with new pots and veg or a salad.

This one makes a regular appearance at our table - I always serve it as suggested, with sweet potato and roasted onions and peppers, although I steam the potatoes and mash them to speed things up a little!

Another tasty way to serve salmon, so quick and easy, is to steam it to keep the moisture in, and serve with your favourite vegetables and sweet chilli sauce (straight out of the bottle!)

I'm adding this thread to my watch list so I can try some of the other great ideas mentioned here!
