55g (2oz) margarine
115g (4oz) caster sugar
2 tbsp syrup
1 egg
Vanilla essence
170g (6oz) plain flour
1 tsp baking powder
2 tbsp cocoa
1/4 tsp salt
1 tsp bicarbonate of soda
1/4 pint milk


1. Cream the fat, sugar, and syrup.
2. Add egg, beat well. Add vanilla essence. Sieve in the flour, baking powder, cocoa and salt, mixing to to a thick batter with the milk with the soda added to the last milk.
3. Bake in two greased and floured 18cm (7") tins and sandwich together with chocolate butter icing. Or bake as one cake in a 22cm (9") tin or a loaf tin.
4. Bake in oven at 190C/375F Gas mark5 for 25-30 mins.

What do you use for the syrup? Holden syrup or just sugared water?

I have made similar but substituting cocoa with instant coffee and for the covering adding my old favourite. Camp Coffee and a drop of Tia Maria when an adult occasion.. I have also baked in a tray finishing off the covering with coarsely grated dark chocolate before cutting into squares.

The recipe suggests that the preparation time is 30 hours - I rather think this may be more like 30 minutes!

This is a recipe published in The Penguin ookery Book published in 1967. It is a favourite with our family as it does not get stale quickly. I always took one with us on our camping holidays.
