Ingredients

4tbsp golden syrup
350g (12oz)white chocolate
150g (5oz) unsalted butter
175g (6oz) plain, oat biscuits, crushed
200g (7oz) dried cranberries
100g (3.5oz) chopped pecan nuts

Handy Hint

Warm a metal spoon to measure out the golden syrup makes it less sticky and messy.

Method

1. Line your tray (30x20cm tin) with clingfilm and put it aside.
2. Weigh out the biscuits and put them into a large plastic sandwich bag. Seal it and use a rolling pin to crush the biscuits.
3. Weigh out the cranberries and pecan nuts and put them aside ready.
4. Melt the chocolate, syrup and butter in a pan over a low heat. When the mixture is smooth and molten, add the biscuits and stir quickly.
5. Continuing to work quickly, add the cranberries and pecan nuts and stir thoroughly. As soon as it's mixed evenly, tip it out into the prepared tin and smooth over with a spatula.
6. Now leave the tray in the fridge to cool: once it’s set cut it into squares.
