Ingredients

225g (8oz) smoked trout
115g (4oz) Quark
2 tbsp parsley (chopped)
1 tbsp Dijon mustard
1/2 tsp pickled lemon peel (chopped) (optional)

Handy Hint

This can be divided into 4 portions and frozen until needed. This recipe is ideal for a light lunch served with little gem lettuce leaves as the carrier for the pate, or as a starter with toasted soda bread.

Method

1. In a bowl mash up the smoked trout
2. When as fine you can make it stir in the Quark until smooth, then add parsley, and lemon peel if used

I have used this recipe for many years when looking for a lunch suitable for when I need to loose a few pounds ( or not as the case may be) its easy and quick to make. The only downside could be the cost of the smoked trout depending on where you buy it.
