Ingredients340g dried mixed fruit300ml fresh apple juice 175g non dairy margarine 175g soft light sugar 3 medium eggs-beaten 200g self raising flour |
Handy HintOptional- Sprinkle the top of the cake lightly with brown sugar whilst still warm. |

Method1. Preheat oven (150C/350F/gas mark 2) and line a 20.5cm round tin with greaseproof paper and grease with oil.2. Place the mixed fruit in a large saucepan, pour over the apple juice & bring the mixture to a boil, turn down and simmer for 20 mins, allow to cool. 3. Cream the marg and the sugar together in a large mixing bowl until pale, gradually beat in the eggs, then fold in the flour & mixed fruit. 4. Spoon mixture into the prepared cake tin and bake in the middle of the oven for 3hours and 15 minutes. 5. Remove from oven and leave for 5 mins . Turn out onto a wire cooling tray. |
