Ingredients

8 chicken thighs
2 tbsp honey
2 tbsp chilli sauce
2 tbsp balsamic vinegar
2 tbsp olive oil
salad leaves

Use different chilli sauces to vary "the heat" of the recipe

Method

1.Preheat oven to 200°C/400°F/gas 6
2.Put the honey, chilli sauce and balsamci vinegar into a large bowl and mix together
3.Add the chicken to the bowl, coating it well with the marinade. Allow to marinate for 15 mins.
4.Coat the base of a roasting pan in olive oil. Place the chicken in the roasting pan and cook in the oven for 15-20 mins (or cook it on the barbecue).

Serve hot with salad leaves.

This is a great recipe to prepare in advance and stick in the oven when everyone arrives. Also chicken thighs are fairly cheap.
