Ingredients

225g (8oz) self-raising flour
340g (12oz) mixed dried fruit
115g (4oz) margarine
1 egg (beaten) (you can use 2 if you like)
8 tbsp (1/4 pint) water
115g (4oz) brown sugar
Pinch of mixed spice

Method

1. Put water, margarine, sugar and fruit into a pan, bring to the boil and simmer for 20 minutes. Cool.
2. Add egg(s) and stir in flour and spices.
3. Place mixture into an 20cm/8" prepared tin and bake in a very moderate oven, (150C/300F/Gas mark 2/3) for about one hour.

Gally, forgot it was fathers day! Oops but this cake was a dream to make, smelled yummy and my father was made up - lock down isn't over here so it was great to phone and leave two doors down at his home = thank you x

Thanks for sharing, Gally. This is so like the fruit load I remember my granny making. Too was born 1910. Me your recipe three times now, each in batches of 4 loafs to give to our friends. It has never failed. I'm just on my way to make another batch this afternoon. Thanks.

This, so far as I remember, was the only fruit cake my Mum ever baked (she was born in 1910) and her Mother (born 1879) gave her the recipe. I occasionally make it and I was born in **** ! It is quick and easy. I sometimes replace the water with cold tea (strained of course...)
