Ingredients

1.6kg chicken
1 onion (halved)
1 tbsp oil
15g butter
1 chicken stock cube
225g baby carrots
225g baby turnips
2 tbsp chopped parsley
2 tbsp cornflour

Method

1. Stuff onion halves into chicken cavity
2. Preheat oven to 180c/350f/Gas Mark4
3. Heat oil and butter in flameproof casserole and cook chicken until brown all over
4. Add stock cube to 300ml boiling water and pour over chicken
5. Place vegetables around chicken then cover casserole and cook for an hour and a half
6. Lift out chicken to rest on serving dish surrounded by cooked vegetables and scatter over parsley
7. Thicken cooking juices with cornflour blended with a little water.
