Minced turkey curry recipe from francesb
IngredientsOil for frying
500g minced turkey
1 large onion (chopped)
1 garlic clove (crushed)
1 tbsp curry powder
1/2 tsp ground cumin
2 tbsp sultanas or raisins
200g canned chick peas
100g frozen peas
150ml coconut milk
100ml chicken stock
Rice to serve
Method1. Heat the oil n a large pan, add the turkey, onion, garlic and fry over a medium heat until browned, stirring to break up any lumps.
2. Stir in the spice and cook for 2 minutes, then add the sultanas or raisins, chickpeas, peas, coconut milk and chicken stock.
3. Season to taste with salt and pepper. Bring to the boil then simmer gently for 25 minutes, stirring occasionally. Serve with rice
