Ingredients

7 tbsp Spanish olive oil
1/2 Spanish onion (sliced)
5 garlic cloves
2 red peppers (deseeded and cut into strips)
1 chorizo sausage (sliced)
1tsp sweet paprika
400g can brown lentils (drained)
2 tbsp Amontillado sherry
Handful of flat leaf parsley leaves
800g thick cod fillet (cut into four pieces)
Salt and freshly ground pepper.

Method

1. Heat 2 tablespoons of the oil in a pan. Add the onion, whole garlic cloves, chillies and chorizo and cook for 5 minutes to soften. Add the paprika, lentils and sherry, season with salt and freshly ground black pepper and heat through for a few minutes. Stir in the parsley, remove from the heat and cover to keep warm while you cook the cod.
2. Heat 2 tablespoons of the oil in a frying pan.Add the cod, skin-side down, and cook for 5 minutes (depending on how thick the fish is).Turn and cook for a few more minutes until cooked through. Serve on top of the lentils and drizzle with the remaining olive oil and any juices from the pan.
