Ingredients150g diced chicken or Quorn piecesGreen pepper Red pepper Black bean Sauce 1 tsp cornstarch (or flour, rice flour, corn flour etc) 2cm fresh ginger (sliced finely. Note this can be omitted) 1 tbsp sesame oil (or any cooking oil) |
Handy HintWhen adding flour to thicken always make up as a thin paste with some COLD water first. |

Method1. Remove stalk and seeds from peppers and chop into pieces same size as chicken/Quorn pieces.2. Mix cornstarch with 2 tbsp cold water to form paste. Heat oil in pan. 3. Saute ginger for 2 minutes stirring all the time. 4. Add chicken/Quorn and saute for about 7 minutes on medium heat, turning every minute or so. 5. Add Black Bean Sauce. Add diced peppers. Add cornstarch paste. 6. Stir fry on high heat until peppers soften. If too thick, add a little water. |
