Ingredients2 tbsp oil1 large onion (chopped) 2 tsp ground cumin 2 tsp ground coriander 1/2 tsp turmeric 1 large garlic clove (crushed) 1 tbsp fresh ginger (finely chopped) 4 chicken breasts (cubed) 400g can chopped tomatoes. Fresh coriander Rice to serve |

Method1. Fry onion in oil for a few minutes til soft.2. Add garlic, ginger and spices. Cook for a few minutes, then add chicken. Allow to brown then add tomatoes. Cover and simmer gently for about 20 minutes. 3. Meanwhile cook the rice and when ready to serve stir fresh coriander through the rice and into the chicken. |
