Ingredients

Small crisp lettuce (cos/iceberg)
3-4 firm tomatoes
1 cucumber
Spring onions
Bunch of parsley (finely chopped)
2 tbsp chopped mint
Olive oil
Salt and black pepper
Juice of 2 lemons
1 pitta bread
Optional: 3 tbsp chopped coriander/2 cloves crushed garlic/pomegranate seeds

Handy Hint

Chop parsley, mint & coriander in a food processor for a good fine finish.

Method

1. Cut open the pitta & toast until crisp (some people prefer to fry bread in olive oil...either way needs to be crisp!) Crunch bread into pieces allow to cool.
2. Tear lettuce into small pieces and place in salad bowl. Chop tomatoes & cucumber into small (1cm) pieces & add to lettuce. Slice spring onions finely & add to salad bowl then add the mint /parsley/ coriander (if used)
3. Mix lemon juice with 3 tbsp olive oil, add salt and black pepper plus the garlic and pour over vegetables. Gently mix the ingedients together.
4. Sprinkle bread pieces & pomegranate on top and serve immediately.
