Ingredients

225g (8oz) self-raising flour
1 packet dates (chopped)
55g (2oz) margarine
1 egg (beaten)
1 level tsp baking soda
55g (2oz) walnuts (chopped)
55g (2oz) sugar

Handy Hint

When cooked, slice and spread with butter.

Method

1. Put chopped dates, sugar and margarine into a bowl, and add 8 tbsp (1/4 pint) of boiling water. Allow to cool.
2. Then sieve flour and baking soda together. Add this, along with the egg and walnuts to the ingredients and mix gently.
3. Put in loaf tin and bake for 45 minutes at 175C/350F.

Whilst I was making this for my husband I didn’t see how it could ever work. However he says it’s delicious. Unforunately I can’t test it as I don’t eat nuts.

My late mother used to make this loaf. We loved it and would often eat it like cake, without spreading any butter on it.
