Ingredients

1 pack of fish pie mix (eg: from Sainsburys which includes salmon, white fish and smoked fish)
Potatoes (peeled and chopped)
Carrots (chopped)
30g (1oz) butter
Heaped tbsp plain flour
1/4 litre (1/2 pint) milk
Peas
Grated cheese
Breadcrumbs

Method

1. Cut up the pieces of fish to your desired size and place in a big dish. At the same time boil your potatoes and carrots until soft.
2. While the potatoes are boiling make a white sauce by melting the butter. Add the plain flour and mix. Then add the milk a bit at a time. Place on the heat and stir continuously until the sauce has thickened.
3. Add the carrots to the fish and peas (as many as you want - I just add them frozen). Then pour over the white sauce.
4. Mash the boiled potatoes and cover the fish mixture. Then to make a crispy topping cover the potatoes scatter with grated cheese and breadcrumbs. Then bake in the oven for 30 mins until the topping has browned and the breadcrumbs have gone crispy and delicious!

My kids have always LOVED this recipe and its a great way to get fish down them. They love the crispy breadcrumb and cheese topping the best :)
