Ingredients

500g Chicken breast
200g plain flour
2 eggs
Mixture of spices (optional - I use Chinese 5 spice, paprika and cayenne pepper.)

Handy Hint

Leave the chicken to soak in the mixture overnight in the fridge for better taste and texture.

Method

1. Cut the chicken breast into chunks. Whisk two eggs and soak the chicken chunks in it.
2. Mix some flour and any spices, adding as much or as little as you like (my girls like theirs spicy so I add more paprika to their mix than my son's)
3. After soaking the chicken in the egg put it into the mixture and make sure the chunks are well covered.
4. Put them into a wok with enough oil to cover the chicken. Cook until golden.
