Ingredients

1 butternut squash
2 sweet potatoes
1 carrot
1/2 litre stock
Garlic and sweet chilli flakes
Salt and pepper

Handy Hint

You may need to adjust sweet potatoes and carrots depending on squash size. Gorgeous served with homemade soda bread

Method

1. Roast squash till cooked then peel and deseed.
2. While this is roasting peel, dice and cook potatoes and carrot in the stock.
3. When tender add squash and seasoning with garlic and chilli, to taste. Then blend to smooth
