Ingredients2kg quinces
1.5 kg jam sugar
Juice of 6 fresh limes
2 tables. rose water |
Handy Hint
Be careful not to boil this too hard, or let it boil dry. |
Method1. Wash and peel quinces.
2. Remove hard middle core and cut into thin slices.
3. Put fruit into large saucepan, add enough water to cover and cook over low heat for 30 mins.
4. Add sugar, continue to cook over low heat for 3 hours.
5. Mixture will become quite thick and will turn a very dark red.
6. Test for setting, when this is achieved (could take another 45 mins), add lime juice. Cook for another 5 minutes, add rosewater and jar up.
