Ingredients3 spring onions - sliced1/2 green or red pepper - sliced 300g raw chicken breast - diced 1 tablespoon oil 100g ripe mango - sliced 1 tablespoon brown sugar 1 " " tomato puree 1 " " vinegar 1 " " soy sauce 1 level tablespoon cornflour 2 tablespoons sweet chilli sauce 150 mls water 4 sheets filo pastry melted butter |

MethodPre-heat oven to 180CHeat oil in saucepan, fry chicken until juices run clear, add spring onions and peppers and continue frying for a further 2 mins. In a small bowl blend together the sugar, tomato puree, vinegar, soy sauce, chilli sauce and cornflour to a smooth paste. Stir in water. Add mango slices and liquid to chicken and simmer gently until thickened. Pour into 8" pie dish and set aside to cool. Brush each filo sheet with melted butter, gently scrunch and arrange on top of chicken mixture. Bake for 15 mins or until golden and crispy. |
