Ingredients

2 eggs
125ml veg oil (I use sunflower)
250ml milk (I use full fat)
200g caster sugar (golden if you like, for the colour)
400g SR flour (or same of plain flour + 3tsps baking powder)
1/2 tsp salt
1-2 cups blackcurrants, fresh or frozen

Handy Hint

I usually turn down the oven heat for that last five minutes so they don't over-brown.

Method

Beat eggs, oil and milk together.
Whisk in sugar and salt.
Stir in flour. You can use a mixer but don't stir more than is necessary to get a smooth batter.
Stir in blackcurrants.

Dollop into muffin tins or paper cases and bake at 190°-200°C for 20-25 mins

Cheaper than buying and better, I think. I don't do low fat anything but you could use semi-skimmed or skinny milk. Excellent with a slice of mild cheese.
