Baileys chocolate cheesecake

Ingredients

½ pack reduced fat digestive biscuits
2 packs light Philadelphia soft cheese
100g low fat unsalted butter
100ml icing sugar
300ml light double cream
25ml Baileys
100g grated chocolate

Method

Melt the butter and add the crushed biscuits. Place the mixture into a greased baking tin. Leave to set for about an hour.
Whip the soft cheese. Mix the cheese with the Baileys and icing sugar. Make sure you sieve the icing sugar to avoid lumps in the cake.
Fold the double cream and grated chocolate into the cheese mixture. Put the mixture onto the cooled biscuit base and leave to set in the fridge for about 2 hours. Sprinkle some more grated chocolate on top of the cake when you serve.
