Turkey leftovers

I'm just wondering what everyone is doing with the leftover turkey - anything new or exciting? tchsmile

I love Boxing Day!

Nothing new and exciting, but this year at least I did remember to buy a dozen rolls to fill with sliced turkey breast for future use. I think I shall have to go and buy another dozen though - This year I went for turkey crown (no left-over legs and drumsticks) but my belt-and-braces SiL persuaded me that it was a bit small for eight - so I bought and cooked a second. In my fridge at the moment are a small mountain of left-overs from crown one, plus a whole untouched crown two.

The carcases will make turkey-leekie soup (I had the foresight to buy leeks too) The uncut one will be halved and frozen - either carved or not, depending how keen I am to do the carving.

Does anyone really want anything new and exciting on Boxing day? I think all the leftovers (duck, smoked salmon, sausages and ham in our case) with salads and cheeses and fruit are the best part, I prefer it to the heavy meals of xmas day.

Seven of us had huge portions of turkey crown and then picked at it in the evening so I don't think there is much left.

I'm with you janerowena, one of the joys of boxing day is that there are always delicious left overs to pick at. We've got left over mashed potato, veggies as well as turkey, ham and lots of fresh cheese, salads, veggies and of course, the Christmas cake, which everyone is too full to eat on the day itself.
I do like making something with pasta and the left over ham, turkey and mushrooms, usually the day after boxing day

I've just had a most delicious sandwich comprising: toasted sour dough, butter, 'mulled wine jelly', turkey breast, advocado, salt & pepper. Accompanied by a glass of Champagne!

The mulled wine jelly was from Fortnum & Mason - I found the jar at the back of the fridge - it was opened last year! tchblush

Just made soup with left over carrots and bubble and squeak with the other veg and ate it with cold turkey, followed by trifle.

We don't have any tchgrin - Christmas at DDs means leftovers are all hers!

Just frozen 6 turkey-filled rolls and put 6 turkey/stuffing/cranberry sauce ones in the fridge for immediate use.The second (uncarved) turkey crown has been cut into six reasonable-sized chunks and frozen. I should have carved it first but can't be arsed.

The carcass and some left-over sausages are simmering for stock, with an onion and a few devils on horseback. Tomorrow I shall make turkey-leekie soup with the stock, chicken scraps, leeks, carrots and some prunes left from making the devils on horseback.

Tonight's meal is turkey/stuffing/cranberry sauce rolls followed by trifle and washed down with wine.

I stripped the carcass yesterday and chopped us some of the turkey to make either a pie, or a pasta dish for lunch today, when youngest and partner were due to visit. Their plans changed, they may or may not eat with us. If they don't, is freezing the remnants the best idea? How many days do folks feel it's 'safe' to eat cooked turkey which has been kept in a fridge?
This is our first year without many more in the house than the 2 of us so the turkey and ham are lasting much longer than usual smile

I had a large chicken instead of a turkey, and tonight I shall do a stir
fry with left over veg and chicken and add curry paste to make a tikka massala. Served with rice probably. I love tossing things around in my wok. grin

I too bought a turkey crown and there's masses of meat left over!

Will strip it today and then simmer the carcass to make stock but will have to freeze the stock as have other meals planned for the rest of the week.

haven't had out turkey yet- having it tomorrow and then a week full of turkey recipes - will keep you posted we love it in currys, stir fries, thick soups casseroles and just as it is.

Sandwiches. Coronation Turkey. Soup. Tonight will be cold turkey, with egg and chips. Turkey and ham (left over gammon) pie. Turkey added to a savoury white sauce and served with rice. Turkey curry. Cold with fresh bread, cheeses and salad.

granjura, I'm using the same ingredients but decided (reluctantly) against a pie, as I'm cooking one tomorrow. I'm doing the turkey, leek, ham and cream with pasta - yum.

Tonight I made wraps.
Stir fried mushrooms, peppers, tomatoes and scallions. Added cooked chopped turkey and sweet chilli sauce. All wrapped up in the flour tortillas that were warming in the oven.
DH got home made potato salad and coleslaw etc with his.
I was content with just the wraps.
Followed by warmed mince pies and custard.

There are so many different things you can do with leftover turkey that I never really understand all the media references to the horror of leftover turkey. And that is setting aside that nowadays it can be packed away in the freezer to be eaten, weeks, if not months after Christmas.

I will be stripping the turkey tomorrow and making stock, which I will freeze to be consumed in a week or two, the frozen meat will be eaten over the next month or two.

If you've got some stock make a risotto, with onions and rice, then add the chopped - up turkey.

Nasigoring - a dish made wth rice, onions, red and yellow peppers, frozen peas and various spices with the chunks of turkey or any other meat stirred in at the end then topped with strips of omelette. Carcass and any other bits and pieces will be used for stock.
