Using up some of the veg from the veg box and making a vegetable and chicken stir-fry with some micriwave rice originally intended for holidays.

I have had an online delivery. Some of what I wanted didn't arrive. I try to use up what I have so tonight it is a baked potato with cauliflower cheese.
I am having some weird and wonderful meals during lockdown.

Thai chicken curry. It's a low carb recipe and uses bulgar wheat instead of rice, which I add to the sauce so it comes out almost like a risotto.
I'm making double, so can freeze portions. Or can have the same tomorrow night.

Chicken satay with fried rice - I put lots of bits and bobs of veg in the rice. The satay marinade and sauce is the easy one from the bbc good food site.

I am having the other half of a sirloin steak left from yesterday. OH is having his usual plate of mixed leftovers probably all on one plate.

A salad of leaves, red onion, cucumber, sundries tomatoes, crispy bacon bits, hard boiled egg and chopped chicken thighs fried in some sort of olive oil - possibly chili!

We're waiting for a food delivery so running short of everything. Pasta with a jar of red pesto. Hope the delivery arrives tomorrow!...

Has anyone tried IKEA'S Swedish meatball recipe yet?

We're having them tonight. I've halved the recipe which will give us five good sized meatballs each. I'm also using crème fraiche instead of double cream.

I got a delivery from Tesco today so I’ll need to use up the short date coleslaw so it’ll be salad for a couple of days with omelette, pizza or chicken.

I've been doing that too Charleygirl although yesterday I bought 3 large chicken thighs so I've had one of them with chips today. It was so big there was no room for any peas and it's a large plate grin It's not that I'm greedy, I like a lot, hahaha.
Strawberries and melon for afters.

Last evening was a homemade chicken stew that was from the freezer and some garlic bread with grilled slices of bacon on top. The bacon needed using and I didn't expect it to be so nice but it is from a local butcher so I don't know why I doubted it. It was lovely.

Fish and chips this evening, homecooked and served with a salad. Lasagne sauce with minced beef is simmering now for tomorrow's meal. It is nicer, in my opinion when the flavours have had at least 24 hours to mingle together. I am off-colour this week, so I am planning for the least amount of work, so that I will have sufficient energy to do a little ironing, which I always find relaxing.

Comfort food...........FISH FINGERS with mash and peas! Both of us have been really busy today so this a quick dinner!
