Boiling broonie. Pleas do not post on this thread.

Oh yes! The recipe!

Mam's Boiling Broonie

Grease and line loaf tin.

4 oz Marg. or Butter
1 cup of Water
Half-cup of Sugar (here you can add your choice of spices). I used 1 flat teaspoon of Cinnamon, and half-teaspoon of Cardamom seeds (crushed)
1 cup of Raisins
1 cup of Currants. (I don't use these. I replace with a mixture of chopped apricots and walnuts. Once I used a cup of dried cranberries and even a drop of sherry)
Teaspoon of Baking Soda
Teaspoon of Treacle

Boil for 15 mins. Cool then add 2 eggs and 2 cups of S.R. FLOUR (add a bit of milk if the mixture is too dry - but it shouldn't be)

Put in Loaf tin (and sprinkle on golden demerara sugar)

Bake at 180 (or equivalent) for about 40 - 45 mins.

It keeps well for about a week if well wrapped, and freezes well, too.

I will make it with Benecol Buttery so it does nothing but good.

This is NOT a post....sounds yummy, will try it as a change from a similar recipe in a Delia Austerity Cookbook, which is much less generous with fruit anyway!hmm

I AM posting! Just sitting down after a baking (boiling?) session and have made my first broonie. Half an hour to go before I take it out of the oven - already looks scrumptious x

Notsogrand I'd love to know how it turned out - did you just substitute the flour or add anything in eg the dreaded Xanthan Gum? cupcake

It's fabulous Butternut. Two slices gone since it came out of the oven, so it looks like its keeping qualities may not be tested!

Kitty it turned out really well using gluten free flour. I didn't add anything else. I haven't heard of the gum stuff you mentioned. It took over an hour to cook though, but I can't imagine that was caused by the flour. I'm not eating cake at the moment, but it was tested by 2 daughters and pronounced delicious.

Thank you Notso I have a wheat intolerance and am wary of baking by just substituting normal flour for GF flour but the GF recipes are sooooo complicated I tend to stick to tried and tested things, usually from Phil Vickery's book. I will definitely give this a try. Thanks again thanks
