Any ideas what to do with a glut of Little Gem lettuce?

My lettuces don't usually do as well as these, but this year I have a long row of beautiful Little Gems, just perfect right now. We can only eat just so many and every visitor goes away with a couple ( whether they want them or not! ). They will start to bolt in a few days , so any ideas ?

I once had a meal in a french restaurant, it was chicken thighs in a white wine and cream sauce with bacon lardons,
petit pois and little gem lettuce , it was delish! I’d forgotten all about it, but we’re going have some time soon ?

Yorksherlass, I've had a meal like that in a Routier restaurant and I agree with you, it was lovely, especially the lettuce. I think it was called ...Chicken with Petit Pois Francaise?

I remember a recipe for lettuce and fresh peas.
Melt some butter in a pan, Add the cut-up lettuce, s&p, then some peas. Plus a tiny bit of veg stock.
Simmer until peas are soft.

chicken, talking of veggie gluts...before we moved to France I'd been reading Peter Mayle's "A Year in Provence" again and in one chapter he told a story about a glut of courgettes. I thought 'that's a bit far-fetched' but then it really happened to me. I'd gone into our local, nearby village and left my car unlocked, when I got back there were about thirty courgettes on the back seat! Someone must have been stalking unsuspecting motorists with bags full of courgettes to get rid of!
Lettuce, tomato and courgette soup is very nice.

GabriellaG54, can you tell any titles of C Drinkwater's books, sound like I'd like them.
Have you read 'Driving Over Lemons' by Chris Stewart, he's written six books I think about his life in Extramaddura? in Spain, he was the first drummer of the group Genesis.

Thanks for the ideas. I'll definitely try the lettuce and pea recipe and freeze some blitzed blanched ones for soup. Waste not, want not.

Wish I was your neighbour chicken, I love little gem but the ones in the shops have been poor this year, I am having to buy loads just to get a few decent hearts from them.
