What have you baked/cooked today?

I wondered if you've made anything nice or interesting in the kitchen today.
I decided to have a wee baking session, normally I bake a couple of things when I put the oven on. So today I made some muffins, I had glace cherries and lemon peel leftover from Christmas and I added some to the mixture.
The other was a lemon coconut cake. Am pleased with both so we'll have something to accompany our tea over the weekend.

Trying not to bake in January as we both have a few pounds to shed, but I cooked a pan full of potatoes this morning and turned it into portions of mash for the freezer. Hate throwing potatoes out, but they do go soft or start to chit if they hang around.
Lemon coconut cake sounds way more delicious than mashed potato maydonoz

I made a Ukrainian borscht soup in half the time because I used a pack of beets from shops. It’s hot delicious and very nutritious.

Well, I heated up some left over chilli and rice, in the microwave, for DH's lunch.
Tonight I shall cook baby new potatoes, to go with our Cook Shop Moroccan Chicken.
( Idid make a Lemon drizzle cake a few days ago though.)

I’ve got a pan of corned beef hash simmering away. I make it using a tin of tomatoes, onion and fresh carrots. I add a handful of frozen peas 5 minutes away from eating - extra vitamins and a bit of colour! I don’t like corned beef cold but love it in a hash with generous dollop of Lee & Perrins sauce.

Made my son in law an apple cake ? for his birthday which I handed over as a doorstep delivery with his card and present and had a 5-minute socially distanced conversation with my daughter and GS too. Made a 2nd apple cake for us which I cut in half and took half to other daughter’s house. Another excuse to set eyes on her and my GD for a few minutes... they joke that I’m still a ‘feeder’ even during lockdown! SO miss seeing them properly, but I’m lucky they live close enough for even this.

I have not actually made anything today yet, but plan to cook Beer Battered Fish and Chips from scratch for tonight's tea. The batter is a Gary Rhodes recipe from about 30years ago when he had his first TV series, the Fish is Cod Loin defrosted from the freezer. Chips are from fresh Maris Piper Potatoes, cut quite chunky.
I do cheat and buy frozen Mushy peas though, and a decent jar of Tartre Sauce to go with it!

The one thing that I miss is my old deep fat fryer, it had a Batter plate in the base that covered the heating elements, and stopped the raw batter sticking to them as the food was lowered in. So the modern ones that I have looked at its only the chip basket that separates the food from these, and raw batter just sticks to them like crazy! They are really only good for Convienience foods, hence I have reverted back to using a big deep base saucepan with a smooth bottom!

Not me but my husband is cooking up a beautiful lasagne as we speak. It will be portioned up and frozen. Yum.

As we speak Mr J has made a Greek lamb dish which is bubbling away in the slow cooker. We are both looking forward to eating this later and there should be some to freeze.

I cooked haddock, mash, peas and parsley sauce, not very adventurous but it was tasty.

Roasted cauliflower soup, with the cauli left from last night's cauliflower cheese (a whole cauli is too big for just the two of us)

Pity you didn't ask yesterday when I baked sourdough bread and made the cauliflower cheese!

(Mr M does most of the cooking these days)

Baked - Lemon drizzle sponge pudding. It has a lovely gooey sauce underneath. Might have custard with it.

Cooked a roast chicken dinner, and putting the left overs in a pie for sunday in around an hours time.
Iv`e become rather lazy tbh due to covid.

I'm baking cod in a tomato and sweet pepper sauce.

Yesterday I made a ginger cake in the breadmaker but it's best kept for a couple of days so we're trying not to eat it yet.

I'd love to bake more but we just don't eat cake.

I've been trying out recipes for some months now and tonight it's a cod bake which sounds very lemony. Am trying to decide what to serve with it. Probably rice.

The only thing today was putting ice cream and tinned mandarins in bowls for DH and myself. (He is on cooking duty this week). Yesterday I did make home made soup which will do our lunches for several days, also a chocolate cake as we have a builder working in the garden so tea and cake in the afternoon.

OH made bread this morning and we heated up the Bolognese Sauce I made yesterday to have with fresh pasta.

I want to make some Flapjacks but we are still slowly eating the Christmas biscuits so they will have to wait :-(

Thank you all for your replies, some lovely dishes being cooked up.
To Polly Dolly, it will be lovely to have tea together, we can only dream of post- Covid days.
I must say the lemon and coconut flavours work well together.
