Halloumi

Silly and inconsequential query really in these times of political chaos. However, does anyone know why it is manufactured into two layers pressed together? Always seems to fall apart as I put it into the pan to cook.

It may be that halloumi comes in thin slices beacause in my experience very thick slices can become very chewy indeed to eat. "It's Squeeky cheese."

(Aldi do a very very nice Feta. better than any of supermarkets.)
(I would really like some spanopkapita now.)

After this cheese is removed from the whey (and while it is still hot) it is traditionally folded in half and left to set.
This gives the typical two tiers that always seem to crumble when you cut into it.
A useful tip is to remove cheese from plastic wrapper and wrap in several layers of kitchen paper.
Keep changing the paper until the cheese feels dry, then cut and serve or fry. Seems to work.

Halloumi and red sweet pepper kebabs are very tasty (they can be grilled or pven-cooked)

I love Greek food. I often make a Lamb Giovetsi which is a rich stew with Orzo pasta. Chunks of Halloumi are added at the end. The GC love it. I could not find a recipe so I just kept tasting it while we were on holiday until I had worked out exactly what was in it. Got it spot on now. Yum!!

I love halloumi though it can be salty but very tasty.
I slice it and fry in a non stick pan without fat until it browns.

Craftycat f anyone wants to try it, I googled Lamb Giovetsi and this came up - they have spelt it differently (lamb youvetsi) but it sounds like the same dish. They are plugging their brand of yoghurt, naturally.
