Christmas Veggie

Can anybody suggest a simple but tasty offering? Not but roast? Is Tofu worth trying? Thanks in advance.

Tofu is tasteless and you have to do so much to it to make it interesting. What about a Veggie Wellington, with ready-made puff pastry

My sister is a veggie, if you don't want to make a tart or wellington then Lidl have a nice frozen range.
Also it depends on how strict they are, some of her freinds claim to be veggies but will eat white meat & roast potatoes in goose fat.

I recoil from Tofu - I will not put into print what I think it looks like but it will never cross my lips. Waitrose do some lovely tarts with tasty fillings, and I have made and frozen some individual nut roasts that are not just a big heap of breadcrumbs but have lots of tomato, nut, egg and cheese, with a cube of cheese in the centre that melts delightfully when they are cooked.

Try a Quorn roast! Goes down a treat with my veggies (and non veggie GC prefer it to turkey!) Find it in the freezer section in large supermarkets.

Iceland do brilliant veg options. Their beetroot and goats cheese nut roast is lovely and also the parsnip and mushroom tart.

The Quorn roast doesn't go down well here as it's rather bland I think.
Ottolenghi has some great recipes and some are online - this Easter pie for example -

Otherwise you could certainly do a mushroom dish as someone else suggested - a pie or Wellington fits in with the other Christmassy foods.

There are various recipes online for cheese and lentil loaf which is popular with family veggies. You can also add stuffing mix with the breadcrumbs which makes it seasonal.

I've only tried tofu once and, sad to say, it went into the bin after the first mouthful.

Just recently I've noticed a Beetroot Wellington on some pub/restaurant menus so it seems to be a new veggie option. I think that Waitrose do a ready-made one but there are a few recipes on the internet if you want to make your own, some vegan, some veggie.

If, of course, you like the earthy taste of beetroot.

The problem for me with catering for veggies and non veggies at Christmas is finding the space in the oven and on the jobs for separate foods which must not be mixed.

I did a stuffed red peppers for my vegan DGD last year and she loved it. I used chestnuts, rice, tomato, garlic, celery, onion and cashews and she loved it. I mixed the filling with olive oil and baked till tender.

Fortunately I did two as DH decided he would prefer one to the roast leg of lamb the rest of us wee eating!

There's a new Linda McCartney Christmas roast that looks nice, and Iceland have a good range of vegetarian and vegan mains. Personally I'm more than happy with a good old nut roast though!

I’m a veggie and am always grateful when people are able to cater for me. Always happy to accept pretty much whatever is offered and most of the uk supermarkets have some nice bits and pieces. Equally, if the person inviting me seems even the slightest bit uncertain I am more than willing to make a suggestion or bring my own, pre-prepared dish. If you’re not sure, why not ask? Good luck and well done for being kind enough and willing to do this for someone not so ‘middle of the road’ at a busy time.

No problem , we are a tiny family of 4 and one is veggie and I like veggie, so no logistical/oven issues!

I do Quorn roast for the two veggies in my family. I haven't tried it. They say it's nice but could just be being polite!

Crisp tofu with sticky sauce- even my tofu hating OH likes it. With 4 vegans to cater for this year I’m doing a mushroom Wellington from the BOSH cookbook , the recipe is online too, will use ready made pastry which most of the supermarkets do which don’t have dairy in.

I am vegetarian and am happy just to have the vegetables as there are loads at Christmas and usually cooked in a more special way that usual. As long as there is a non meat sauce or gravy, I am happy.
I am making a butter bean loaf this year (which is nicer than it sounds). Supermarkets have much more choice of vegetarian mains nowadays.
