Handy hygiene on cookery programmes

Been watching lots of cookery programmes lately. Anyone else notice the lack of basic food hygiene with some top chefs? Eg handling raw chicken then proceeding to handle salad after little more than a 3 sec hand splash under the tap. Some don’t even bother with the token splash. Saw one yesterday handle raw chicken into the pan then without washing hands chop up the salad and put on serving plate. Can’t help thinking if they do that in front of a tv camera what are the standards like behind closed doors. Also the mixing and serving using their bare hands when there is a rack of utensils beside them. There that’s my moan over for the day!

Quite agree with you. Have you also noticed the licking of fingers and tasting with a spoon we don’t see getting washed?Just got my food hygiene certificate so maybe I am extra watchful. Normal food outlets look to get a 5 star rating for being top on food hygiene. Makes you wonder what goes on in some kitchens.

“Handy” hygiene was a typo but maybe it’s appropriate. Some of them do the token wash like a 2 yr old if they’re not given help washing their handies!

I so agree, as a retired Chef I can often be found shouting at the TV.
Another bugbear is clothes, hair and Jewelry.
Chefs do not wear whites for fun, they wear them because they change out of outdoor clothes to clean ones.
Hair hanging everywhere, and watches, rings and bracelets, even those festival bands which must be filthy.
Also sticking fingers into sauces etc to taste them, use a spoon,, please.
I could go on and on and on.
Oh and do not be fooled by those wearing plastic gloves, unless they are changed all the time they are less hygenic than well washed hands.

How about the separating egg yolks from whites by straining through their fingers? When did that become normal practice?

Just mauling the food all the time, do they really need to use their hands to arrange food on the plates?

Quite agree about hair all over the place, and should wear aprons when cooking.

Don’t like to see gelled nails either, Mary Berry I’m looking at you.

I agree with Felice about the gloves, they can give a false impression of cleanliness where it can be severely lacking. I was standing in a sandwich bar queue watching the array of fillings being stuffed in to sandwiches and rolls. Then realised the same gloved hands were being used to take cash from customers and use till. I went home for lunch!

Washing hands properly would not make good TV especially if it has to be done several times during a cookery programme.

True Rosenoir, but I think they should at least use the utensils sitting on the worktop to prepare and serve up instead of clawing through everything with bare hands. I pity the studio guests who sit there and sample the end product

Also knives, they change the chopping boards but use the same knives.
I still do a lot of cooking and was preparing Canapés here once for a garden party. A friend was doing the running back and forward to the garden and started putting stuff in the dishwasher, including 5 knives which were on separate boards.
Took me ages to explain to her that they were for different things.
She was amazed, said she always just used the same knife.
I pointed out that as well as any kind of cross-contamination slicing Strawberries with the same knife as chopping eggs for posh sarnies could make things taste a wee bit weird.confused

I don't like Mary Berry's false nails when she is using her hands to mix pastry. I would expect to eat her food and find one inside grin

My beef is that they never seem to wash vegetables. They chop celery, cabbage and lettuce without washing. There is always dirt on those veg and many others.

felice I agree totally with your post above re:clothes,hair,jewellery etc.
