I finally used up the one super-sized courgette....

...that came in our veg box at least 3 weeks ago, and has been looking at me with pathetic reproach every time I‘ve opened the salad drawer, because it knows I didn’t really want it.

But now the weather’s really cooled off and I felt like making it, I’ve just added it, finely chopped, to a big batch of semi-veggie mince - semi not because of e.g. quorn, but lots of finely chopped veg and red lentils.
Most of it will go in the freezer. ?

I can now open the salad drawer without feeling bad!

I have dozens of big courgettes from my allotment I ve been giving them away and still have about six big ones golden, green and speckled left they ve been magnificent
I also got patty pan squash which I don’t know what you do with

Goodness, @Illte, what do you do with them? Spiralize them into courgetti? Add them to a tomatoey pasta sauce?

A dd was given a real whopper recently - more like a marrow, and didn’t know what to do with it. I suggested stuffing it - I don’t think stuffed marrow is too bad at all, not that I’ve had it more than once in the past 10 years or so.

I like the look of those cucumbers! Cucumber fan here, would def. grow some if we had room for a greenhouse.

We have one oversized courgette in the fridge, perhaps stuffed "marrow" tomorrow (and the next day and Saturday) and there's another one still growing on the plant.

Do not mention cucumbers!
The cucumber soup went down the loo. We hate wasting food but it was horrible.

Courgette bake freezes ok, Illte as long as you don't cook the courgettes too much first.

I have enjoyed quite a few courgette cakes lately! Apart from incorporating courgettes into most meals for about 2 months now!

All home grown but they have finished now.

Or sliced lengthways thickly, distinctly with flour, salt and pepper, brush with olive oil and grill or barbecue.

I did post on another thread; it took ages to make, cucumbers peeled, deseeded, fried onions and garlic gently, added diced cucumbers (about 7 of them!), added stock, cooked then blitzed.
It tasted bitter, I added a little sugar and DH said "I'd like to say this tastes good but I can't" (something like that). He'll eat anything!

We have given lots away too, they taste fine raw.

BlueBelle patty pan is lovely roasted with some herbs Ours have been awful this year. Fallen off their stalks when quite small or rotted. Last year we had loads. Perhaps it’s the wet.

That was only yesterday's haul. They're all there again today?

And alas, alack, I have no freezer callistemon. At the beginning of March the workmen arrived as arranged and ripped out the kitchen, utility room and downstairs toilet.

Then we went into lockdown and they were all furloughed?

Then they were unfurloughed and knocked down walls and plastered and plumbed with a will. But all my appliances were stuck somewhere in Ireland.

I'm hoping to have a cooker and freezer soon.

Meanwhile it's salmon and courgettes for dinner?

Oh no!
Courgette bake is out too then, although you could make ratatouille in a microwave (if you have one).
Our new kitchen never got past the planning stage, so the old one got a good clean instead.
We had salmon and green beans last night.

Have had courgette with every evening meal for over a week now. Love them but courgette fatigue is definitely setting in. grin

There are some great courgette recipes from the forums all collated here: Courgette recipes. I quite like the fritters and I've already got some of the soup made and in the freezer.

I grated one into today's Bolognese sauce along with a carrot. Getting veg into dgs the sneaky way.

Slice the courgette into about 2cm slices, fry the slices until they begin to go brown. Meanwhile cook some onions, tomatoes, garlic and mince (if you're not veggie). Pile the tomato mix on to the garlic slices. Top with cheese (mozarella and parmesan work well). Bake for about 30 minutes. Freezes well.
